The 2022 vintage is unmistakably St Henri, offering a rich, fruit-forward palate with a quiet sense of power. Aromas of raspberry, wild berries, freshly roasted coffee and cinnamon unfold in the glass, followed by savoury hints of marinated olives, peppers and brine. The palate brings together generous berry fruit with hazelnut, macadamia, white chocolate and Dutch liquorice, creating a plush, layered wine with real presence. Ripe, integrated tannins provide a firm yet effortless framework, balancing the fruit and carrying the wine to a long finish. A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. Land that was once a high country sheep station is now a flourishing vineyard. Sheep and rabbits co-existed on the land for quite some time but the sheep couldn't keep up with the nocturnal activity of the rabbits, and in the end were driven off the land. Rabbits now run free on the vineyard and fuelled by high altitude Pinot Noir, some are reputed to be the size of ponies, but that's another story... The Rabbit Ranch Pinot Noir is made in a very soft, fruit forward, low tannin style - a wine to be savoured and supped, rather than an assault on the senses.
